I cannot decide

My 19th birthday was amazing. I had a houseparty with decks, lights, smoke machine- the works. 200 people back from the club. Was being evicted from this condemned, cold house. A mate unexpectedly came through with a bag of chats in the club. I was gifted a g of class A charles too, a long time before it was common in my country. One or two women interested but so wired I don’t know what went on. Mad little events happened, all good. Then in the wee hours all my closest friends and my 2 brothers huddled in the living room I realised I had set a fire in the fireplace. Lit that up, cuddled into a big momma and one of the lads phoned for a fat bag of green for the comedown. It arrived 5 minutes later. Fire burned til midday. Pure love in that room. Unforgettable.

Then there was Valentines when I was 21. Madly in love for a year. She came to visit my new doss house for 5 days (usually one or two) Cooked a fancy 3 course meal for her. Flowers. Lingerie. All housemates helping, rolling j’s. They all cleared out when dinner was served. Made love maybe half a dozen times in a freezing cold room by a roaring fire. Did not know sex could be like that. Nothing has come close since.

Then there was a strange one. I’d quit all the heavy stuff and started working out and practicing Taijiquan. I quit my job and moved back in with my mother. This was a strange day as nothing unusual happened. I woke and cooked a good solid breakfast. Don’t have time for that now. 5 minutes and out the door normally.
I played with my niece and hit the gym. Broke my personal best on the ergometer and worked every muscle in my body to exhaustion thrice. Had a swim, steam and sauna. Snatched lunch from my nieces and nephews plates at my mothers. It’s kill or be killed for lunch there. Cycled out to the docks and soaked up some sun (this is a very rare treat in my country) Practiced my 32 movement chen style taijiquan. Cycled out to my brothers to watch a new episode of the Sopranos. It was the one where some New York made guys meet Vito in a gaybar.
During the episode a thunder and lightening storm erupted. As soon as it ended the brother and I cycled down to the beach. Sat on the roof of a changing room watching the lightening (very rare here too) in the hot summer rain and smoked a couple j’s.

Now I’m alone and I’ve lost touch with most of those friends.
Fvck it. I’m only 25. Perhaps there will be a day to top those to come.
Memories. God bless the memories.

when god blessed em with my hubby of almost one year in one week . 2.19.08

What should I do? This is totally ripping my head apart?

Friday, August 6th, 2010

I have been accepted to a culinary school in New York, and I live in Florida. My parents are working really hard to keep me here and I can understand why. But if I stay I will turn into my 45 year old uncle who is still living with his mommy and daddy. If I stay then I will kill myself because I’m doing something that will cause me to be miserable. If I go, then there is a possibility that I will become homeless.

What should I do?

They are not going to disown you and leave you homeless because you go off to school. You have to follow your dreams. Of course, there are closer culinary schools aren’t there? In fact, the Cordon Blue has a school in Atlanta. I know that it is adventurous to be away from home, but it is great to be close enough to visit. My son went to school about 2 hours away from me. It was very helpful when he damaged his cell phone, and was too busy to take a bus to the nearest repair center. And when his gf dropped her laptop, I ran down to Atlanta to take it to the repair man.

During the freshman orientation, there were many of the college’s older students who spoke to the new parents. They said that, other than money, their parents coming to take them off campus for a break was the most helpful thing. They spoke of how just a day off campus with their families helped to relieve the stress, and refocus them.

Please consider a closer school for your sake and your parents. But don’t give up your dreams. Good luck.

Joy of Cooking: Turkey Carving

Thursday, August 5th, 2010

Seventy-five years ago, a St. Louis widow named Irma Rombauer took her life savings and self-published a book called The Joy of Cooking. Her daughter Marion tested recipes and made the illustrations, and they sold their mother-daughter project from Irma’s apartment. Today, nine revisions later, the Joy of Cooking — selected by The New York Public Library as one of the 150 most important and influential books of the twentieth century — has taught tens of millions of people to cook, helped feed and delight millions beyond that, answered countless kitchen and food questions, and averted many a cooking crisis.

Where can I find cooking classes in Orange County, CA area?

Tuesday, August 3rd, 2010

My 10 year old niece wants to learn how to cook and I wanted to find some place where her and I could take cooking classes together. Any suggestions would be greatly appreciated.

I took some "cooking" classes at Mr. Stox in Anaheim, but I think they just have participation dinners now. However, they’re quite pricey (about $110 each), so not appropriate for a child – but they’re a WONDERFUL way to spend an evening with your husband! Check out their website! … It’s my very favorite restaurant:)

What Sort of Credentials Are Needed for Culinary School?

Tuesday, August 3rd, 2010

I like to write, draw, et cetera- but that’s not guarentee of a stable job. On the other hand, people always need to eat, and usually enjoy having other people cook for them.
So, going to a culinary instituate seems like a logical choice if I want a steady job.

One would take maths classes to prepare for a math major, or English classes to prepare for journalism. However, I do NOT want to take foods classes during high school AT ALL. Is that okay? What sort of things does one need to do to get into a good culinary institute (like the one in New York)?

Please bear in mind that culinary schools have very high tuition and offer highly-specialized training that frequently results in a job with fairly low pay, as restaurant jobs traditionally are. There are few high-paid chefs in the world.

What you might want to look into is a more general education–perhaps starting as an undeclared student at a community college or state university–and see what develops. Unfortunately, the intellectual level of food work isn’t particularly stimulating, and if you like to write, draw, and think, you’ll really want to get something of an education.

The jobs will take care of themselves. Right now there are an awful lot of kids graduating from these culinary schools, and they’re finding themselves in financial difficulties because kitchen jobs don’t pay enough to repay student loans.
